More About Oleans Coffee Exchange

Specialty Coffee from the Heart of New Orleans
Orleans Coffee Exchange was founded in 1983 as one of the first specialty coffee companies to offer coffees via mail order. And we've been selling on the Web since 1997. We are a small, family-owned company that takes pride in providing the highest quality coffees at a fair price. We take customer satisfaction very seriously.

We also provide coffee to the majority of New Orleans coffee houses, as well as to local restaurants and hotels. If you've visited New Orleans, chances are, you've tasted coffee that was roasted at our roastery. For more information, take a peek behind the scenes.

Always Roasted to Order
Orleans Coffee Exchange has been the premiere micro-roaster in New Orleans since we began our business in 1983. We roast beans every day in our roastery near the New Orleans airport. We're a touch fanatical about the quality of our coffee and roasts, so there's always a lot going on. But we're never too busy to have a little fun while we're at it. This is still New Orleans, after all!

When coffees arrive at our roastery from the dozens of countries around the world that produce quality beans, they're packaged in large burlap sacks that protect the green beans from sun, heat, and moisture. Each sack is marked with information about the farm where the coffee was produced, and is often accompanied by colorful logos. Many people use burlap coffee sacks as wall decorations.

Green beans, you say? Well, yes. Coffee beans are raw and green when we buy them. It's not until we roast the beans in our Diedrich roaster that the beans take on the range of browns—from light cinnamon to dark, oily and almost black—that most people identify with coffee beans.

Coffee roasting is an artesian craft, and our Master Roaster takes special care to roast every bean with the correct combination of heat, airflow, and timing to deliver the perfect cup.

Quality in Every Bean
One of our favorite activities at the roastery is "cupping" coffee. Coffee cupping is very similar to wine tasting and we do it to evaluate the flavor profile of a coffee, and also to evaluate a coffee for defects or to create coffee blends. We evaluate the green and roasted coffees, and we taste each one. This coffee cupping technique is how we come up with the description of notes, acidity, and body that are referred to in the descriptions of coffees on our site.

For instance, our Ethiopian Yirgacheffe is a full-bodied coffee with a bright acidity and notes of jasmine, tangerine, and berry. Once you take some time to search your palette for coffee notes, you'll start to know exactly what kind of coffee you prefer. It's just like knowing whether you prefer dry or fruity red wine.

Shipped Daily
Once your beans are roasted, we package them, label them, and assemble each order. As you can imagine, that means a lot of different coffees to sort and pack! Once the packing is done, the boxes are picked up by FeEX or UPS, and they're off to be delivered to you.

More about Pasquini

History

The year was 1946, and Ambrose Pasquini had just arrived in New York. Fresh from fighting in the underground resistance in Italy against the Germans, he had left his ravaged
homeland to seek opportunities in the burgeoning United States.

Mr. Pasquini moved to Los Angeles in 1951 as a top tool and dye maker for Mitchell Camera House, yet he could never escape the feeling that something was missing. Growing up in Europe he would enjoy an espresso in the mornings and often times during the day, but now in America he missed this rich coffee of his native Milan.

So he imported an espresso machine and opened a called Moka D'Oro in Los Angeles on the now famous Vermont Avenue. It was the first espresso in Southern California. The only had few customers at first, and Mr. Pasquini often felt alone in his passion for the small cups of strong coffee.

Eventually other restaurant owners began asking him about this "new contraption that makes coffee". So he began importing machines, changing their European wiring to American standards and selling them to the local restaurants in his area. As time passed and business prospered, Mr. Pasquini started to modify the machines even more, adding improvements such as pressure and temperature controls that left less room for user error. His main concerned being performance and durability for the restaurant owners.

Although the Los Angeles public now loves their coffee, at first the community seemed reticent for the new product that Mr. Pasquini had such affection for. Not one to shirk from a challenge, he whittled away at the resistance to the new devices by introducing espresso to consumers and restauranteurs alike through his successful Los Angeles s like the Sunset strip's Via Veneto and Pasquini's, which was open for 25 years in the alley of the old Bullock's department store downtown Los Angeles.

Now five decades later, he heads a family business that's riding the boom in Italian-style coffee. Today the Pasquini Company is a family business with Mr. Pasquini's sons, Guy and Matthew, working at the company. The present commercial machines, imported from the La Cimbali Company in Milan, are perhaps the most common espresso machines found
in restaurants and 's around the country.

L'Orangerie
Disneyland & Disney World Hotels
The Olive Garden
J. Paul Getty Museum and Villa

These, among many others have known for years what you can discover today; that the secret to the finest espresso and cappuccino is Pasquini.
